Sautéed Potatoes

General: Serves 4.
Ingredients:

 

700g boiling potatoes, peeled and cut into

1.5cm cubes

345ml vegetable oil

1 small onion, chopped

15-30g butter

salt and pepper
Method:

Put the potatoes into a saucepan and cover with cold salted water. Bring to the boil.

Simmer for 1 minute, then drain well in a colander. Turn onto a tea towel and pat dry.

Heat the oil in a frying pan over moderately high heat. Add the potato cubes and fry for 10 minutes or until they start to turn golden.

Stir and turn the potatoes frequently so the brown evenly on all sides.

Add the onion and cook, stirring, until the potatoes are just tender. Add the butter. Season with salt and pepper.

Cook for a further 2 minutes, stirring constantly.

Serve hot.
