Roasted Vegetables with Herbs

General: Serves 4.
Ingredients:

 

150g baby marrow, sliced thickly at an angle

1 red pepper, seeded and cut into chunks

1 yellow pepper, seeded and cut into chunks

I onion, peeled and cut into wedges

250g cherry tomatoes

250g mushrooms, halved

75ml olive oil

10ml dried basil or 30ml fresh basil

salt and freshly ground black pepper to taste

 

Method:

Drizzle half the olive oil over baby marrows, pepper and onion.

Bake in a preheated oven at 220 degrees Celsius for 15 minutes.

Drizzle remaining oil over tomatoes and mushrooms, add to rest of vegetables and bake for a further 15 minutes.

Season with salt and pepper.

Serve as a side dish with a braai/ barbeque.
