Baked Sweet Potato with Chilli Butter

General: Serves 6.
Ingredients:

6 sweet potatoes

100g unsalted butter

5ml garlic and herb salt or chives

5ml paprika

5ml crushed chilli

1ml ground cumin

1ml origanum

1ml ground coriander

15ml cold-pressed olive oil

3ml vegetable or herbal salt

 

Method:

Cut slits into the sweet potatoes at 1/2 cm intervals, and bake at 180 degrees of Celsius, for 45 - 50 minutes or until done.

Meanwhile make the chilli butter by blending all the remaining ingredients in a food processor.

Remove sweet potatoes from oven and serve with dollops of chilli butter.
