Peanut Sauce

General: Very versatile sauce for loads of oriental dishes. Great with ice cream too!

Ingredients:


2 lemongrass stalks

5cm piece of ginger

1 large onion, sliced

3tsp ground chillies

Half cup tamarind juice

Salt and sugar to taste

300g roasted peanuts, pounded



Method:

 

Grind together lemongrass and ginger. Fry the onion slices until fragrant. Add ground chillies and tamarind juice. Stir well.

Add salt and sugar, then add peanuts and stir constantly until sauce is quite thick.
