Spicy Fried Calamari

General: Serves 4!


Ingredients:

1kg frozen calamari rings

120g flour

15ml ground cumin

5 - 10ml chilli powder

salt and black pepper to taste

oil for frying

1 egg, beaten

a dash of Tabasco sauce, if desired

190ml mayonnaise

30ml lime/lemon juice

45ml chopped coriander leaves


Method:

 

Thaw and rinse calamari and pat dry.

Combine flour with cumin, chilli powder, salt and pepper.

Heat oil in a deep fryer or large pot to 190 degrees Celsius.

Dip calamari in beaten egg, letting excess drip off.

Dredge with flour mixture and fry in hot oil in batches, until lightly browned and crispy.

Sprinkle with Tabasco sauce if desired and drain on paper towels. Keep warm in a low oven until all thecalamari is fried.

To serve combine mayonnaise with lime juice and chopped coriander and garnish plates with fresh coriander leaves and wedges of lemon.
