Omelette Foo Yung

General: Serves 4.

Ingredients:


15ml groundnut or vegetable oil

2-3 spring onions, chopped

1 celery stalk, diced

10ml finely chopped fresh ginger

1 garlic clove, finely chopped

115g peeled cooked prawns

55g white crabmeat

30g cooked ham, diced

25ml chopped fresh coriander

15-30ml soy sauce, plus more to serve

8 or 12 eggs

salt and pepper

55-85g butter



Method:

 

Heat the oil in a frying pan over moderate heat. Add the spring onions, celery, ginger and garlic and cook for 1 minute, stirring frequently.

Add the prawns, crabmeat and ham. Sprinkle with the coriander and soy sauce.

Reduce the heat to low and leave the mixture to heat through, stirring occasionally.

Meanwhile make 4 omelettes, using 2 or 3 eggs for each.

Before folding each omelette, spoon one-quarter of the prawns and crab filling over the centre.

Serve hot, with more soy sauce for sprinkling.
