Rice Salad with Prawns

General: Serves 4.


Ingredients:

Salad:

120g [150ml] uncooked brown rice

3celery stalks, cut into rings

3 oranges, peeled and cut into segments

1 tin [200g] prawns, drained

Curry Sauce:

100ml mayonnaise

75ml Bulgarian yoghurt

7ml mild curry powder

pinch of sugar

salt and pepper


Method:

 

Cook the rice in salt water until tender and drain.

Cool down and mix with the celery, orange segments and prawns.

Mix all the ingredients for the sauce and season to taste with salt and pepper.

Mix sauce with salad ingredients, dish into salad bowl and garnish with celery leaves.
