Quick Rice Salad

General: Serves 6 to 8.


Ingredients:

6 x 250ml cooked rice

3 eggs, hard boiled and chopped

1 onion, cut into rings

1 red pepper, cut into cubes

1 green pepper, cut into cubes

1 big tomato, peeled and cut into cubes

half a bottle [375g] gherkins, cut into rings

200g stuffed olives, cut into rings

a few black olives

75ml mayonnaise

75ml gherkin juice, [canned liquid]

salt and pepper


Method:

 

Mix most ingredients for salad [keep a little for garnish], except the mayonnaise and gherkin juice.

Mix the mayonnaise and gherkin juice and pour over salad ingredients.

Mix well and season with salt and pepper.

Turn into a salad bowl and garnish with salad ingredients.

Store in fridge until needed.
