Feta and Spinach Salad

General: Serves 4!

Ingredients:

300g fresh spinach, torn in bite-size pieces

225g [any variety] feta, cubed and crumbled

3 hard boiled eggs, chopped

5 rashers bacon, crisply fried and crumbled

75ml salted peanuts

 

Dressing:

250ml plain yoghurt

125ml mayonnaise

60ml chopped spring onions

milk


Method:

Mix together all dressing ingredients except milk.

Stir in milk until desired consistency is reached. Cover and refrigerate for 2 hours.

Toss all salad ingredients together and serve with dressing.
