Pork Hot-pot with Apples

General: Serves 4!

Ingredients:

30g butter

4 large pork loin chops, well trimmed

1 small onion, thinly sliced

2 apples, peeled and thinly sliced

5ml sweet paprika

10ml chopped sage or 2.5 dried sage

salt and pepper

60ml apple juice

575-700g sweet potatoes, thickly sliced



Method:

Preheat a 180 degrees Celsius/Gas 4 oven.

Grease a baking dish with one quarter of the butter. Arrange the chops in one layer.

Scatter the onion and apples on top and sprinkle with paprika, sage, salt and pepper.

Pour over the juice.

Lay the potato slices over the surface, slightly overlapping them. Cover with foil or a lid.

Bake for 1 ½ hours. Uncover and dot with the remaining butter. Continue baking, uncovered for 20-30 minutes or until the potatoes are lightly browned.
