Seafood Pancakes

General: Serves 4.

Ingredients:

50ml butter

1 onion, chopped

3 celery sticks, chopped

50ml cake flour

250ml milk

250ml cream

700g mixed, fresh seafood [mussels, cob, prawns,

calamari, etc.]

fresh dill

salt and pepper

8 pancakes

125ml Cheddar cheese, shredded



Method:

Preheat oven to 180 degrees Celsius.

Heat butter in frying pan and fry onion and celery over medium heat till soft, about 10-15 minutes. Add the cake flour and stir.

Then add milk and half of the cream and stir until the sauce thickens or start to boil. Stir in the seafood and simmer for 5 minutes. Season with dill, salt and pepper.

Spoon mixture onto pancakes and roll them up. Place in a buttered oven-dish.

Heat the remaining cream to thicken and season with pepper. Remove from stove top and add the cheese.

Pour over the pancakes and bake for 20-25 minutes or until the cheese start to bubble.

Serve with a green salad.
