Preheat the grill. Put the spinach in a large pan with butter. Cover and cook until the leaves are wilted. Uncover and boil to evaporate the excess Liquid.
Mix in the cream, nutmeg and seasoning. Poach the eggs.
Divide the spinach among 4 individual shallow gratin dishes or a large gratin dish.
Spread it evenly and make hollows for the eggs. Set a poached egg in each hollow. Spoon over cheese sauce to coat the eggs lightly. Sprinkle the grated cheese evenly over the top.
Grill for 2-3 minutes or until the cheese has melted
and is lightly browned. Serve immediately. |
