Chicken Wings with Tomato in Cream

General: Serves 4.


Ingredients:

250ml Greek yoghurt

salt and fresh milled pepper

12 chicken wings

4 ripe tomatoes

20ml olive oil

2 onions

250ml thick cream

5ml soft brown sugar

30ml fresh basil, roughly cut


Method:

 

Preheat oven to 260 degree Celsius.

Prepare a baking sheet with foil. Mix yoghurt with salt and pepper, and marinade the wings in the mixture for 30 minutes at least.

Cover all the wings with the mixture.

Half the tomatoes and drip 10ml of oil over it. Season with salt and pepper.

Arrange the wings and tomatoes on the baking sheet, and bake for 15 - 20 minutes, turning halfway through.

The wings must be cooked through, with the ends darkened and the tomatoes should be soft.

Peel the onions and half them lengthways. Place on a cutting board and cut finely lengthways.

Heat remaining oil and sauté onions over medium heat until soft but not browned.

Add cream and brown sugar and bring to the boil.

Simmer until thickened. Season with basil and salt and pepper.

To serve place the wings and tomatoes on a plate and pour the cream sauce over.

Serve with fresh bread or pasta.
