Sift the cake flour, baking powder, bicarbonate
of soda, salt and cinnamon together.
Beat the eggs,
oil and sugar well together and add the carrots.
Mix well and fold in the dry ingredients.
Mix thoroughly
and spoon into a prepared ring tin [27 - 30cm].
Bake
in a preheated oven of 160 degrees of Celsius
for 65 minutes.
Icing
Mix all ingredients well and spread over cooled
cake. |
