Carrot Cake

General: Always a winner!

Ingredients:

500ml cake flour

10ml baking powder

10ml bicarbonate of soda

5ml salt

10ml cinnamon

4 eggs

250ml oil

500ml sugar

750ml grated carrots

Icing

250g cream cheese

15ml oil

250ml icing sugar


Method:

Sift the cake flour, baking powder, bicarbonate of soda, salt and cinnamon together.

Beat the eggs, oil and sugar well together and add the carrots. Mix well and fold in the dry ingredients.

Mix thoroughly and spoon into a prepared ring tin [27 - 30cm].

Bake in a preheated oven of 160 degrees of Celsius for 65 minutes.

Icing

Mix all ingredients well and spread over cooled cake.
