Meat Loaf with Mushroom Stuffing

General: Serves 6!

Ingredients:

225g mushrooms

1 small onion, finely chopped

30g butter

130g fresh breadcrumbs

45ml chopped fresh parsley

5ml dried thyme

10ml bottled brown sauce

salt and pepper

700g lean minced beef

225g lean minced pork

75ml tomato ketchup

2 eggs, beaten



Method:

Preheat a 190degrees Celcius/Gas 5 oven.

Cook the mushrooms and onions on the butter over moderate hear until soft. Turn mixture into a bowl.

Add the breadcrumbs, parsley, thyme, brown sauce, salt and pepper. Mix well.

In another bowl, mix the beef with the pork, tomato ketchup and eggs.

Pack half of the meat mixture into a large loaf tin, pressing it into an even layer. Pack the mushrooms mixture on top, then cover with the rest of the meat. Bake for 1 ¼ hours.

Remove from the oven and leave to stand for 15 minutes. Pour off the juices, then turn out the meat loaf on to a serving plate. Serve hot.
