Beef Satay with Peanut Sauce

General: Serves 8!

Ingredients:


Beef Satay

1.5kg beef fillet, cut into bite-size pieces

10 shallots or small onions

Half tsp cinnamon powder

2tsp cooking oil

Skewers

1 tsp cumin seeds

1 tsp coriander seeds

Half tsp turmeric

2 tsp roasted peanuts

1 tsp sugar

Half tsp salt

Peanut sauce

2 lemongrass stalks

5cm piece of ginger

1 large onion, sliced

3tsp ground chillies

Half cup tamarind juice

Salt and sugar to taste

300g roasted peanuts, pounded



Method:

 

Grind together seasoning ingredients. Marinate beef with seasoning, shallots, cinnamon powder and cooking oil.

Thread five pieces of meat on each skewer and grill over glowing coals or in a griddle pan. Brush occasionally with oil and cook tender.

Peanut sauce

Grind together lemongrass and ginger. Fry the onion slices until fragrant. Add ground chillies and tamarind juice. Stir well.

Add salt and sugar, then add peanuts and stir constantly until sauce is quite thick.
