Grind together seasoning ingredients. Marinate
beef with seasoning, shallots, cinnamon powder and
cooking oil.
Thread five pieces of meat on each skewer and grill
over glowing coals or in a griddle pan. Brush occasionally
with oil and cook tender.
Peanut sauce
Grind together lemongrass and ginger. Fry the onion
slices until fragrant. Add ground chillies and tamarind
juice. Stir well.
Add salt and sugar, then add peanuts and stir constantly
until sauce is quite thick.
